A friend of mine introduced me to Quinoa about a year ago. She put some in a salad she prepared for our lunch. The salad was delicious and I will certainly have to post the recipe at a later date. I had no clue what Quinoa was so of course I had to Google it!
Quinoa is a seed, not a grain. It is related to the spinach family. Quinoa is a good source of protein, fat, and vitamin E. It can also be a substitute for any grain.
It is a freezing cold dreary day, and I am stuck in doors nursing my sweet little daughter back to good health. I decided to get creative, pull out the box of Quinoa in my pantry, and whip something up.
My new creation….
Cinnamon Banana Quinoa!
1 cup cooked Quinoa
1 small banana
2 cups water
1 oz of raw almonds
Prep time: 17 minuets
Prepare Quinoa, follow instructions on the box. You will add 1 cup of quinoa and 2 cups of water to boil on the stove top. Once you receive a boil, lower your heat and simmer for 15 minuets. This will make ALOT!! Just warning you!
Slice small banana.
Once your quinoa is finished place about 3/4-1 cup in a bow. Layer with banana slices, almonds, and top with Cinnamon to taste!
The Quinoa is nice and warm so it led me to thinking that this dish may be best served for breakfast! The texture of the dish reminded me of oatmeal, or porridge! It was very tasteful and very satisfying. The almonds gave it just the right CRUNCH! If you want to make it into a porridge I would suggest you smash the bananas up with the Quinoa and cinnamon first, then add the almonds!

Breakfast can become boring morning after morning of the same old boring thing. Even though I LOVE BREAKFAST and my mmm mm home made Egg McMuffin, this morning I wanted something new. My creation turned into a delicious protein packed Chocolate Banana & Kiwi Breakfast Smoothie!
1 small banana
1 Kiwi peeled
3 tbsp. Plain Greek Yogurt
2 tbsp. Chia seeds
1 cup unsweet vanilla almond milk
1 scoop chocolate peanut butter whey protein powder
about 1 tbsp. honey
7 ice cubes
Throw it all in the blender and blend until smooth!

Like most men, my Husband is always craving something hearty and meaty for Dinner. We are a family of 6 and on the constant go for most of the school year due to football and basketball games so I rely on my crockpot to help satisfy my families tummies A LOT! This Double Meaty Beef Stew is slow cooked all day long in the crockpot, which makes meal time prep a swift breeze! So let’s get right to it shall we?
Instead of regular stew meat you pick up at your local grocery store look for thinly sliced Carne Picada Extra Thin. It is over there by the stew meat. I found it at WAL-MART. To make this recipe double meaty we are going to add hamburger meat as well.
Super Easy Double Meaty Delicious Beef Stew Recipe
2 cans corn (white and yellow mix)
2 cans green beans
2 cans diced tomatoes
2 cans carrots
1 big can stewed tomatoes
1 tbsp. coconut oil
2 Beef Stew packets ( I like the Great Value packet the best)
2.5 lbs. of Carne Picada Extra thin (lightly floured and browned in skillet do not drain)
1 lb. ground beef ( browned in skillet-do not drain grease)
Heat coconut oil in your skillet on Med-High Heat. Lightly flour the Carne Picada Extra thin meat and brown in skillet. Set aside, do not drain.
Brown ground beef in separate skillet. Do not drain.
Empty all your canned veggies, stewed tomatoes, and potatoes into your crockpot.
Empty Beef Stew season packets into crockpot.
Empty your Carne Picada and your ground beef into crockpot.
Now take a look and see if your stew level is lower then the fill line of the crockpot. If it is, add water until you get it to the top!
Slow cook on High in crockpot for 5-6 Hours.
Empty in big bowls and enjoy!
We love to eat our Double Meaty Beef Stew with some yummy sweet cornbread!
In the South we love our TEA and our Cornbread SWEET! 🙂
I use the Jiffy Cornbread Mix!
I follow the directions on the box for my cornbread, but to make it sweet I add a half cup of sugar into the mix. I have to use two boxes because of my family size so I end up adding a full cup of sugar to the cornbread mix before I bake it as the box instructs!

Being very short on time these days with various sports activities keeping us out of the home all but one day during the week, meals have become quiet monotonous to say the least! Today I got a wild hair and decided to put a spin on the children’s beloved Hot Dog! Since dear Son was my taste tester I let him name it!
Let me introduce you to the
Things you will need:
1 Package of your favorite hot dog weenies
1 Package of your favorite bacon
1 Package of your favorite shredded cheese
16 tooth picks
1 deep baking pan
Prep time: 7
Bake time: 20-25 minutes
Oven Temperature: 350
Using your knife cut a slit through weenie from top to bottom.
Next, take your shredded cheese and begin to stuff the inside of the weenies with your cheese.
Using both hands poke the bacon with your toothpick at the top of the weenie. Wrap the bacon all the way down the weenie and secure the bacon with another toothpick. I was able to use two toothpicks per weenie.
Now it is time to put these little bacon doggies in the oven. Remember to use a deep baking dish as the bacon grease will be oozing off the bacon as it bakes. I baked mine at 350 for about 23 minuets.
Ta Da! PERFECTION! The Bacon Dog is ready to be dressed up on the hot dog bun!
Now it is time to serve! My son likes his Bacon Dog with Ketchup and extra cheese! I did have chili to put on top, but we didn’t use it tonight!
Top your Bacon Dog to your likening! (mustard, pickle relish, chili, ketchup, extra cheese, onions)

Cool, Cold, Refreshing
I love Fridays!! Nothing feels better then to start your day off with some heart pumping cardio, samba dancing fun! Last night I decided to throw some ingredients together in some new pop cycle containers I purchased at our local Wal-Mart. After I got home from the gym, I was thrilled to remember I had prepared these last night so they would be ready for today. They were the perfect refreshing snack after a hot and sweaty work out! These were so delicious I just had to share them with you guys!
Super EASY and FAST to whip up!
What you will need:
coconut milk (I used unsweetened vanilla)
Freezer pop containers (Mine makes 6)
Slice banana slices thinly into the freezer pop containers, then add the coconut milk. Secure lid that holds the freezer pop stick. Place in your freezer to freeze. When completely frozen remove from Freezer and run the top under warm water until lid comes off easily. ENJOY
Very smooth coconut and banana flavor! I will try using a few drops of vanilla abstract next time to enhance the sweet flavors of the coconut milk and the banana slices.
It was blissful and the kids enjoyed them too!

I am super busy juggling five kids, one husband, and teaching a preschool class. With that said, I am really bad about impulse eating, this gets me in trouble! I recently found this amazing low carb, gluten free protein bar that I just had to share with you!! This bar is perfect for a quick breakfast or lunch paired with a piece of fruit such as a banana, or a quick in between meal snack. I have also used these to supplement cookies and sweets. I guess you could say it is my guilt free indulgence if you will. With 20 grams of protein, no sugar added, and only 2-6 net carbs, this baby rocks!! I am currently in love with the chocolate chip cookie dough bar and the double chocolate chunk bar. The questbar impresses me because of its soft chewy texture. I have tried cinnamon roll, cookies and cream, chocolate brownie. I haven’t tasted one that I wanted to spit out yet!!
They have a huge variety of flavors at your local GNC shop. I have just found one flavor at the HEBPLUS up the road, double chocolate chunk. I throw these babies in my gym bag, lunch box, and purse. I never know when hunger is going to strike, and I need to be prepared to make a healthy choice and not a fast convenient not so healthy choice I will regret later!
